New Delhi: What’s not to love about this fruit? That is juicy, refreshing and so full of goodness. A fruit, when eaten right out of the refrigerator, has the power to make us forget about the scorching heat of summer months. But, having said that, we must have it in moderation because too much of anything can lead to more harm than good. Believed to have been originated in China, litchi or lychee is a hydrating and an absolutely delicious fruit. We spoke with recipe creator and founder of the blog, The Soul Treat, Sampada Pandey, to help us with a few instant recipes to make the most of this luscious fruit.

Without further ado, let’s dive into the recipes:

Litchi vanilla shake

This season, beat the heat with this easy-peasy litchi vanilla shake. “It is super easy as it requires only four ingredients and is a refreshing summer drink,” the food blogger says.


1. Litchi (deseeded) – 1 cup

2. Milk – 1/2 cup

3. Vanilla ice cream – 3 scoops

4. Vanilla essence – 1/2 tsp

5. Castor sugar (if needed) – as per your taste


1. In a blender, add all the ingredients and blitz it together.

2. Pour the shake in your glass. Top it with some whipped cream and rose petals.

Can anything be simpler and refreshing than this? This vanilla litchi recipe will leave you wanting for more.

Instant litchi pickle

Add the missing flavour to your meal with this pickle’s perfect tanginess and mild sweetness. “This sweet, spicy and oil free instant achaar goes perfectly with every meal,” Pandey adds while sharing the recipe.


1. Litchi (deseeded) – 1 cup

2. Asafoetida (hing) – 1/4 tsp

3. Red chilli powder – as per your taste

4. Lime juice – 1/4 tsp

5. Rock salt – as per your taste


1. In a glass jar, take chopped litchi, add red chilli powder, asafoetida, salt and lime juice.

2. Mix well and let it rest for an hour or more.

Instant litchi recipe with an Indian twist to it. Serve it with your paratha or enjoy it just like that.

Hacks to make the most out of this refreshing fruit

Enjoy litchi off season: Deseed the litchis, store them in small batches in a zip lock bag and freeze it up. Use the frozen litchis to make smoothies and shakes. Also, add them to your plain yogurt to enjoy litchi flavoured yogurt anytime of the year.

Refreshing litchi juice on the go: Blend those frozen litchis or fresh deseeded ones with some sugar and strain the pulp using a sieve. Take the litchi juice and throw away the remaining pulp on the sieve. Fill half a glass with the fresh litchi juice and the other half with chilled soda. Add a pop of colour with mint leaves and lemon slice. Quench the summer heat with this refreshing summer cooler.
